Used to be, a store or a restaurant wanted to stay in one place for a long time, putting down roots and getting to know its customers. That’s the old model. The new—and rapidly proliferating—modality is “open, sell, leave,” sometimes in barely legal spaces with only a Twitter trail to beckon customers. Call it guerrilla retail; in the past few months, there have been more impermanent shops than ever, particularly in food and fashion. Here, for example, is The New Flea (201 Mulberry St., nr.
